Bang Bang Fried Rice

A flavorful one-pan dish featuring jasmine rice, fresh vegetables, and a creamy, spicy bang bang sauce.

  • 3 cups leftover jasmine rice
  • 1 cup bell peppers, diced
  • 1 cup green onions, chopped
  • 1 cup cooked protein (chicken, shrimp, tofu)
  • 1/2 cup peas
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together mayonnaise, sriracha, soy sauce, and garlic powder until smooth. Set aside.
  2. In a large skillet, heat 1 tablespoon of oil over medium-high heat until shimmering.
  3. Add bell peppers and peas to the skillet, stirring frequently for about 2-3 minutes until tender but still crisp.
  4. Add your choice of cooked protein to the pan, stirring continuously for another 2 minutes to warm.
  5. Toss in the leftover jasmine rice, breaking up any clumps. Stir constantly for 3-4 minutes until heated throughout.
  6. Pour the bang bang sauce over the rice mixture, mixing well. Adjust seasoning with salt and pepper if needed.
  7. Remove from heat and garnish with chopped green onions. Serve hot.
