Blackberry Velvet Gothic Cake

A sinfully delicious cake that combines the richness of chocolate with the brightness of blackberries, perfect for any occasion.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup fresh blackberries (plus more for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until uniformly mixed.
  3. In another bowl, whisk together buttermilk, oil, and eggs until smooth.
  4. Gradually add the wet mixture to the dry ingredients, mixing gently until just combined.
  5. Carefully fold in the blackberries.
  6. Pour the batter into a prepared 9-inch round cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow the cake to cool for 10 minutes in the pan before inverting onto a wire rack.
  9. Once cooled, decorate with additional blackberries and frosting of your choice.

Notes

For best results, use room temperature ingredients and don’t overmix the batter.
