Cajun Chicken Mac and Cheese

A flavorful twist on classic mac and cheese with Cajun chicken and spices, perfect for family dinners.

  • 8 oz elbow macaroni
  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté the diced chicken with 1 tablespoon of Cajun seasoning for 7-10 minutes.
  3. In the same pot used for the pasta, melt the butter over medium heat and whisk in the flour, cooking for about 2 minutes.
  4. Gradually whisk in the milk and stir until thickened, about 3-5 minutes.
  5. Add the cheddar cheese, remaining Cajun seasoning, salt, and pepper, mixing until melted and creamy.
  6. Combine the pasta and cooked chicken with the cheese sauce, folding gently to mix.
  7. If desired, transfer to a greased baking dish, top with extra cheese, and bake at 350°F (175°C) for 15-20 minutes.
  8. Let cool slightly before serving and enjoy!

Notes

Consider using different cheeses or adding vegetables for variations. Can store leftovers in the refrigerator for up to three days.
