Carrot Oatmeal Cookies with Cream Cheese Frosting

  • 1 cup chopped walnuts, optional
  • 1/2 cup raisins, optional
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened, for frosting
  • 2 cups powdered sugar, sifted if lumpy
  • 1 teaspoon vanilla extract, for frosting

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture and mix just until combined.
  6. Fold in the grated carrots, oats, and optional walnuts or raisins.
  7. Drop dough balls onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12 to 15 minutes until edges are golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. For the frosting, beat together cream cheese and butter until smooth, then add powdered sugar and vanilla extract.
  11. Once cookies are cool, frost each cookie generously.

Notes

Finely grate the carrots for even distribution and avoid adding excess moisture.
