Carrot Raisin Oatmeal Yogurt Cake

  • 1 cup grated carrots
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/3 cup maple syrup or honey
  • 2 large eggs or flax eggs
  • 1/2 cup Greek yogurt or dairy-free yogurt
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1/3 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, combine oat flour, baking powder, baking soda, salt, and cinnamon. Whisk to combine.
  3. In another bowl, whisk together maple syrup and eggs. Add Greek yogurt, melted coconut oil, and vanilla extract; mix well.
  4. Gradually add the dry ingredients to the wet ingredients; stir until just combined.
  5. Fold in grated carrots and raisins gently.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool before serving; let it rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store leftover slices in an airtight container in the refrigerator for up to 4 days. Wrap individual slices tightly and freeze for up to 2 months.
