Chicken Ranch Lasagna Soup

  • 2 cups cooked chicken, shredded or diced
  • 3 cups shredded cheddar cheese
  • 7 lasagna sheets, broken into pieces
  • 1 cup diced carrots
  • 1 cup diced yellow onion
  • 1 cup diced celery
  • 3 cups whole milk
  • 3 cups chicken broth
  • 5 tablespoons butter
  • 1 teaspoon olive oil
  • 1/4 cup all-purpose flour
  • 2 tablespoons ranch seasoning
  • 1 teaspoon chicken bouillon powder

Instructions

  1. Melt the butter and olive oil in a large pot over medium heat.
  2. Add the diced onions, carrots, and celery, and sauté until softened, about 5 minutes.
  3. Stir in the flour and cook for another minute to form a light roux.
  4. Gradually add chicken broth and whole milk, stirring continuously until smooth.
  5. Add cooked chicken, ranch seasoning, chicken bouillon, and lasagna pieces, stirring to combine.
  6. Bring to a boil, then simmer for 15 to 20 minutes until the lasagna pieces are cooked.
  7. Stir in cheddar cheese until melted and taste for seasoning.

Notes

If the soup thickens too much, thin with extra milk or broth when reheating.
