Church Lady Butter Pecan Cookies

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped pecans, toasted

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until just combined.
  4. Whisk together the all purpose flour, baking soda, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the toasted, chopped pecans until evenly distributed.
  7. Scoop tablespoonfuls of dough onto the prepared baking sheet, leaving 2 inches between each mound.
  8. Bake for 10 to 12 minutes, until edges are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For chewier cookies, underbake slightly. Store cooled cookies in an airtight container at room temperature for up to 4 days.
