Creamy Beef Taco Stuffed Shells

A comforting twist on taco and pasta, these stuffed shells are filled with seasoned beef, cream cheese, and topped with melted cheese.

  • 1216 Jumbo Pasta Shells
  • 1 pound Ground Beef
  • 1 medium Onion, diced
  • 1 packet Taco Seasoning
  • 1 can Diced Tomatoes with Green Chiles
  • 8 ounces Cream Cheese
  • 2 cups Shredded Cheese (your choice)
  • ½ cup Sour Cream
  • Green Onions (for garnish)

Instructions

  1. Cook the Pasta: Boil water in a large pot and cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  2. Brown the Meat: In a skillet, cook the diced onion until translucent. Add ground beef, breaking it apart until browned.
  3. Add Seasoning: Stir in taco seasoning, diced tomatoes, and cream cheese; cook until the cream cheese melts.
  4. Prepare the Filling: Mix in 1 cup of shredded cheese and sour cream until creamy.
  5. Stuff the Shells: Preheat oven to 350°F (175°C). Spoon beef mixture into each shell and place in a greased baking dish.
  6. Top it Off: Sprinkle remaining cheese over the top and add extra taco seasoning if desired.
  7. Bake: Cover with foil and bake for 20 minutes. Remove foil for the last 5 minutes to brown the cheese.

Notes

For a vegetarian version, swap ground beef with black beans or lentils and add diced bell peppers.
