  • 3 packages (8 ounces each) cream cheese
  • 1 cup sour cream
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • ¼ cup all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter in a bowl until crumbly, then press into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add sour cream, brown sugar, eggs, flour, ginger, cinnamon, and nutmeg, mixing until combined.
  4. Pour the filling over the crust, spreading evenly.
  5. Bake for 50-60 minutes, until the edges are set but the center jiggles slightly.
  6. Turn off the oven and let the cheesecake cool with the door ajar for 1 hour. Refrigerate for at least 4 hours or overnight.
