Crock Pot Swamp Potatoes

A comforting slow-cooked dish featuring tender yellow potatoes, smoky turkey sausage, and flavorful green beans, perfect for busy weeknights and potlucks.

  • 2 lbs yellow potatoes, scrubbed and quartered
  • 1/2 cup yellow onion, diced
  • 12 oz smoked turkey sausage, sliced
  • 2 cans (14.5 oz each) cut green beans, drained
  • 1 stick (1/2 cup) unsalted butter
  • 1 packet (0.6 oz) Italian dressing seasoning mix

Instructions

  1. Place the quartered potatoes in the bottom of the crock pot, arranging them cut-side down for faster tenderness.
  2. Add the diced onion, sliced smoked turkey sausage, and drained green beans on top of the potatoes, distributing them evenly.
  3. Cut the butter into slices and place the slices on top of the mixture so it melts over everything as it cooks.
  4. Sprinkle the Italian dressing seasoning mix evenly over the top to season the whole pot.
  5. Cover and cook on low for 360 to 480 minutes or on high for 240 to 300 minutes, until the potatoes are tender when pierced with a fork.
  6. Stir before serving to combine the melted butter and seasoning into the potatoes and beans, then serve hot and enjoy your swamp potatoes.

Notes

Cut potatoes into similar-sized quarters for even cooking. Refrigerate leftovers in an airtight container for up to 3 to 4 days.
