Crockpot Chicken and Stuffing Casserole

A comforting and easy casserole with tender chicken, creamy sauce, and a crunchy stuffing topping, perfect for weeknight dinners.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (6 oz) box chicken stuffing mix
  • 1 bag frozen mixed vegetables (1216 oz)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 1/2 tsp Kinder’s Buttery Garlic & Herb seasoning
  • 2 cups chicken broth, divided
  • 1/2 tsp black pepper

Instructions

  1. Place the chicken breasts in the bottom of the crockpot in a single layer.
  2. Combine the cream of chicken soup, sour cream, 1 cup chicken broth, and seasoning in a mixing bowl. Whisk until smooth.
  3. Pour the mixture over the chicken, ensuring they are covered.
  4. Add the frozen mixed vegetables on top.
  5. Sprinkle the chicken stuffing mix over the vegetables.
  6. Pour the remaining chicken broth over the stuffing mix.
  7. Cover and cook on low for 6 to 8 hours or on high for 4 hours.
  8. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and let it melt.
  9. Serve and enjoy.

Notes

Use full-fat sour cream for creaminess. Adjust seasoning to taste before cooking.
