Dirty Cabbage with Smoked Turkey Sausages

A cozy skillet meal featuring tender cabbage, smoky turkey sausage, and ground beef with a touch of Cajun seasoning.

  • 1 medium head of green cabbage, cleaned and cut into large triangular pieces
  • 1 lb smoked turkey sausage, sliced into rounds
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 tablespoon Cajun seasoning (or to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Heat a large pot over medium heat. Add the ground beef and brown it, breaking it up as it cooks. Cook until no pink remains.
  2. Drain any excess fat from the pot and return it to medium heat. Add the sliced smoked turkey sausage, chopped onion, and chopped green and red bell peppers. Cook, stirring occasionally, until the vegetables are softened, about 5 to 7 minutes.
  3. Stir in the Cajun seasoning, garlic powder, onion powder, black pepper, and paprika until everything is evenly coated.
  4. Add the cabbage pieces to the pot and mix well so the cabbage is combined with the meats and spices.
  5. Cover the pot and reduce heat to low. Simmer for about 30 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded.
  6. Serve hot straight from the pot, great with crusty bread or over rice.

Notes

Cut the cabbage into similar sized triangular pieces for even cooking. Adjust the Cajun seasoning to taste if the turkey sausage is salty.
