Easy Pierogi Sausage Casserole

A delightful casserole combining pan-fried kielbasa and potato-filled pierogies under creamy sauce and melted cheese, perfect for family gatherings.

  • 1 package frozen pierogi (about 16 oz)
  • 1 lb smoked sausage or kielbasa, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 onion, diced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the sliced sausage and diced onion for about 5-7 minutes until the sausage is browned and the onion is translucent.
  3. In a large mixing bowl, stir together the cream of mushroom soup, sour cream, and season with salt and pepper. Fold in the sautéed sausage and onion.
  4. In a greased baking dish, spread half of the frozen pierogi across the bottom. Top with half of the sausage mixture and half of the shredded cheese. Repeat the layering process finishing with a layer of cheese.
  5. Cover the dish with aluminum foil and bake for 30 minutes.
  6. After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
  7. Allow the casserole to cool for about 10 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can be frozen for up to 3 months.
