Garlic Butter Chicken Bites with Creamy Parmesan Pasta

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups pasta (such as fettuccine or penne)
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside. Reserve a small ladle of pasta water if needed to loosen the sauce later.
  2. In a large skillet, melt the butter over medium heat and add the minced garlic, sautéing until fragrant, about 30 to 60 seconds.
  3. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5 to 8 minutes depending on size. Stir occasionally for even browning.
  4. Reduce heat to low, add the heavy cream and Parmesan cheese, stirring until the sauce is creamy and well combined.
  5. Toss in the cooked pasta and lemon juice, mixing until the pasta is coated. Add reserved pasta water a tablespoon at a time if the sauce is too thick.
  6. Serve warm, garnished with chopped parsley.

Notes

Use room temperature chicken for even cooking. Refrigerate leftovers in an airtight container for up to 3 days.
