Garlic Butter Chicken Pasta

A cozy, flavorful weeknight dinner featuring tender chicken coated in a silky garlic butter sauce tossed with fettuccine or linguine.

  • 2 lbs boneless chicken, cut into bite-sized pieces
  • 1 lb fettuccine or linguine
  • 1 cup butter, room temperature
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish
  • Red pepper flakes (optional)

Instructions

  1. Gather all ingredients. Cut the chicken into bite-sized pieces and mince the garlic.
  2. Bring salted water to a boil in a large pot. Cook the pasta according to package instructions until al dente, then drain and set aside, reserving 1/2 cup of pasta cooking water.
  3. Melt 1/2 cup of butter in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 7 to 10 minutes.
  4. Add the minced garlic to the skillet and sauté for 1 to 2 minutes until fragrant.
  5. Pour in the chicken broth and heavy cream. Stir and let it simmer for 5 minutes.
  6. Add the cooked pasta, remaining butter, Parmesan cheese, and Italian seasoning. Toss to combine, adding reserved pasta water if the sauce is too thick.
  7. Taste and season with additional salt, pepper, and red pepper flakes as desired. Serve immediately, garnished with chopped parsley.

Notes

Reserve pasta water before draining to loosen the sauce as needed. Use freshly grated Parmesan for best melting and flavor.
