Homemade Easy Cheesy Pizza Pockets

  • 1 cup shredded cheese (mozzarella and cheddar)
  • ½ cup pizza sauce
  • ½ cup preferred toppings (pepperoni, bell peppers, mushrooms)
  • Flour for dusting

Instructions

  1. Prepare the Dough: Combine flour, warm water, yeast, and a pinch of salt in a bowl. Knead until smooth and elastic, about 5-7 minutes. Allow to rise for 15-20 minutes in a warm place until doubled.
  2. Preheat the Oven: Preheat your oven to 400°F (200°C).
  3. Roll Out the Dough: Dust a clean countertop with flour and roll the dough into a ¼-inch thick sheet. Cut out circles about 5 inches in diameter.
  4. Fill the Pockets: On one half of each circle, place about 2 tablespoons of pizza sauce, followed by cheese and toppings. Leave space around the edges.
  5. Seal and Crimp: Fold the dough over the filling, pressing down the edges to seal. Use a fork to crimp for a decorative touch.
  6. Bake the Pizza Pockets: Place on a parchment-lined baking sheet, brush with olive oil, and bake for about 20 minutes until golden brown and crisp.
  7. Cool and Serve: Let cool for a few minutes, then serve warm, possibly with extra pizza sauce for dipping.
