Honey Garlic Chicken Bites with Creamy Parmesan Rice

Warm, sticky honey garlic glaze meets cheesy rice in this comforting one-pan meal with tender chicken bites and velvety rice.

  • 2 tablespoons olive oil

  • 1/2 teaspoon garlic powder
  • 5 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon butter
  • 1 1/2 cups jasmine or white rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the creamy rice: In a large pot combine 1 1/2 cups rice and 3 cups chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender and the liquid is absorbed.
  2. Finish the rice: Remove the pot from heat and stir in 1 tablespoon butter, 1 cup heavy cream, 1/2 cup softened cream cheese, 1 cup shredded mozzarella, and 1/2 cup grated Parmesan until melted and smooth. Season with 1 teaspoon Italian seasoning, salt, and pepper to taste. Keep warm while you cook the chicken.
  3. Prepare the chicken: Heat 2 tablespoons olive oil in a skillet over medium-high heat. Season the cut chicken pieces with salt, black pepper, and 1/2 teaspoon garlic powder. Place the chicken in a single layer and sear until golden and cooked through, about 12 to 15 minutes, turning as needed for even browning.
  4. Make the honey garlic sauce: Push the cooked chicken to the edges of the skillet to create an open center. Add 1 tablespoon butter and minced garlic to the center and sauté for about 30 seconds until fragrant. Add 1/4 cup honey, 2 tablespoons soy sauce, and 1 tablespoon apple cider vinegar, then simmer and stir until the sauce thickens slightly, about 2 to 3 minutes. Coat the chicken with the sauce.
  5. Assemble and serve: Spoon creamy Parmesan rice onto plates, top with honey garlic chicken bites, and drizzle any remaining pan sauce over everything. Garnish with chopped fresh parsley and serve hot.

Notes

Pat the chicken pieces dry before seasoning for better browning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
