Impressive Cranberry Brie Stuffed Chicken

A delicious and elegant dish featuring chicken breasts stuffed with creamy brie cheese and tart cranberry sauce.

  • 2 boneless, skinless chicken breasts
  • 4 ounces brie cheese
  • 1/2 cup cranberry sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Pound the chicken breasts to an even thickness.
  2. Season the chicken breasts with salt, pepper, and thyme.
  3. Mix the brie cheese with the cranberry sauce in a bowl.
  4. Spoon the filling onto one side of each chicken breast and fold, securing with toothpicks if necessary.
  5. Heat olive oil in a large skillet over medium-high heat, and sear the chicken for about 4-5 minutes on each side.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest, then slice and serve garnished with parsley.
