Lunchbox Magic: 15-Minute Pizza Muffins

Quick and delicious pizza muffins that are perfect for lunchboxes, snacks, or appetizers.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup shredded mozzarella cheese
  • ½ cup pizza sauce
  • 1 egg
  • ½ cup diced pepperoni or veggies (bell peppers, olives, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a standard muffin tin or line it with muffin cups.
  3. In a large mixing bowl, combine the flour, baking powder, and salt.
  4. In a separate bowl, whisk together the egg and pizza sauce.
  5. Gradually add the wet ingredients to the dry mixture, stirring gently until just combined.
  6. Add in the shredded mozzarella and diced pepperoni or veggies, stirring gently.
  7. Pour the batter evenly into the prepared muffin cups, filling each about ¾ full.
  8. Bake for 15-18 minutes or until golden brown and a toothpick comes out clean.

Notes

Allow muffins to cool before storing in an airtight container. Can be frozen for up to three months.
