Salted Caramel Cheesecake Cookies

  • 1 cup cream cheese
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup salted caramel sauce
  • Flaky sea salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the cream cheese and butter in a mixing bowl. Beat until smooth and creamy, about 2 minutes.
  3. Add both sugars to the mixture and beat until well combined, approximately 2 more minutes.
  4. In a separate bowl, whisk the egg and vanilla extract together, then pour into the cream cheese blend, mixing until fully incorporated.
  5. In another bowl, combine the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing just until blended.
  6. Fold in the salted caramel sauce until well-distributed.
  7. Scoop tablespoon-sized dollops onto the baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes until edges are golden and centers look slightly underbaked.

Notes

Store cookies in an airtight container at room temperature for up to four days. Freeze dough for up to three months.
