Slow Cooker Garlic Butter Beef with Potatoes

A hearty and comforting dish featuring tender beef and creamy potatoes, all simmered in a rich garlic butter sauce.

  • 2 lbs beef chuck roast, cut into large chunks
  • 4 medium potatoes, peeled and cut into chunks
  • 1 stick (1/2 cup) unsalted garlic butter
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • Salt and pepper, to taste
  • Optional herbs (thyme or rosemary)

Instructions

  1. Trim any excess fat from the beef chuck roast and season with salt and pepper.
  2. Optional: Sear the beef chunks in a skillet over medium-high heat until browned.
  3. Layer sliced onions and garlic at the bottom of the slow cooker, then add seared beef chunks and top with potato chunks.
  4. In a bowl, mix melted garlic butter, beef broth, soy sauce, and herbs, then pour over the beef and potatoes.
  5. Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
  6. Gently stir to combine flavors, and simmer with the lid off for 15 minutes for a thicker sauce, if desired.
  7. Serve warm and enjoy!

Notes

For variations, consider adding root vegetables or different meats. Ensure your slow cooker has enough capacity for even cooking.
