  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup sugar
  • 1/2 tsp baking powder

  • 1/2 cup cold butter, cubed
  • 1/4 cup whole milk
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine all-purpose flour, shredded coconut, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Add cold cubed butter and mix until it resembles coarse crumbs.
  4. Stir in whole milk, coconut milk, and vanilla extract until just combined.
  5. Drop spoonfuls of dough on the prepared baking sheet, about 2 inches apart.
  6. Bake for 15-20 minutes until golden brown on the edges.
  7. Let cool slightly before transferring to a wire rack.
