Apple Zucchini Bread

Delightful bread that perfectly marries sweet and savory with a moist texture, ideal for breakfast or dessert.

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil or avocado oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/3 cup packed light or dark brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 and 1/4 cups shredded zucchini
  • 1 heaping cup peeled and chopped apple
  • Optional: coarse sparkling sugar for topping

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a loaf pan.
  2. Whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, allspice, ground ginger, and nutmeg until combined.
  3. Mix together the vegetable oil (or avocado oil), unsweetened applesauce, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients, stirring gently to combine.
  5. Toss the peeled and chopped apples with the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon, then fold into the batter gently.
  6. Spread the batter evenly into the prepared loaf pan.
  7. Bake for 50 to 60 minutes or until a toothpick inserted comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For enhanced flavor, let the batter sit briefly before baking. Store in an airtight container for up to 3 days.
