Banana Pudding

A nostalgic dessert featuring creamy layers of pudding, bananas, and a fluffy meringue topping.

  • 2 egg whites (room temperature)
  • ⅛ tsp kosher salt
  • 4 tbsp sugar
  • ¼ tsp vanilla extract
  • 1 (6 oz) box instant vanilla pudding
  • 2¾ cups milk
  • 1 (7¼ oz) box vanilla wafers
  • 4 medium bananas (sliced)

Instructions

  1. Beat the egg whites and kosher salt in a mixing bowl until frothy. Gradually add the sugar, one tablespoon at a time, continuing to beat until stiff peaks form. Mix in the vanilla extract gently.
  2. Combine the milk and instant vanilla pudding in a separate bowl. Whisk until smooth and thickened.
  3. Layer the vanilla wafers, sliced bananas, and pudding mixture in a large serving dish, finishing with the pudding on top.
  4. Spread the prepared meringue evenly over the pudding.
  5. Bake in a preheated oven at 350°F for 10 to 12 minutes, or until the meringue is lightly browned.

Notes

For best meringue texture, ensure your mixing bowl is free of grease or yolks. Store leftovers in airtight container for up to three days.
