Blueberry Crumble Bars

Deliciously simple Blueberry Crumble Bars featuring sweet-tart blueberries under a buttery crunch.

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup white sugar (for filling)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Mix the brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl until everything is well mixed.
  3. Add the room temperature egg yolk and melted butter to the dry mixture. Mix until the dough is crumbly but holds together when pressed.
  4. Press two-thirds of the crumble mixture into the bottom of the prepared baking pan to form the crust.
  5. Prepare the filling by combining the frozen (or fresh) blueberries, 1/2 cup of white sugar, and lemon juice in another bowl. Stir to coat the blueberries evenly.
  6. Assemble the blueberry mixture over the crust in the baking pan and sprinkle the reserved crumble mixture on top.
  7. Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and bubbly.
  8. Cool the bars in the pan before slicing them into squares for serving.

Notes

For an added layer of flavor, sprinkle cinnamon in the crumble. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. These bars freeze well for up to three months.
