Blueberry Crumble Bars

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Combine the brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl. Stir until everything is well incorporated.
  3. Add the egg yolk and melted butter to the dry mixture, mixing gently until the mixture turns crumbly.
  4. Reserve 1 cup of the crumble mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared baking pan.
  5. Combine the blueberries, white sugar, and lemon juice in a separate bowl. Mix gently to coat the blueberries.
  6. Spoon the blueberry mixture over the pressed crust base, spreading it evenly.
  7. Sprinkle the reserved crumble mixture over the top of the blueberries.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbling.
  9. Allow the bars to cool in the pan on a wire rack, then lift them out using the parchment paper and cut into squares.

Notes

For an extra touch, you can add a sprinkle of cinnamon to the crumble mixture. Store in an airtight container for up to 3 days or refrigerate for a week.
