Blueberry Pie Bars

Delightfully sweet and tart blueberry pie bars with a buttery, crumbly crust, perfect for any gathering.

  • 1 and 1/2 cups all-purpose flour
  • 1 cup old-fashioned whole rolled oats
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 10 tablespoons unsalted butter, melted
  • 4 and 1/2 cups blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9-inch square pan with parchment paper.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking powder, lemon zest, cinnamon, and salt until well combined.
  3. Pour the melted butter into the dry ingredients and mix until the mixture becomes crumbly.
  4. Press about 2/3 of the mixture firmly into the bottom of the prepared pan to form a crust. Bake for 10 minutes.
  5. While the crust is baking, combine the blueberries, granulated sugar, cornstarch, and lemon juice in a saucepan over medium heat. Cook until thickened, about 5-7 minutes.
  6. Pour the thickened blueberry filling evenly over the baked crust. Sprinkle the remaining crumbly mixture on top.
  7. Return the pan to the oven and bake for an additional 45-55 minutes, until the filling is set and the top is lightly golden.
  8. Allow the bars to cool completely in the pan before cutting into squares for serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. These can be frozen for up to 3 months.
