  • 1/4 tsp salt
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 tbsp vanilla
  • 2 tsps espresso powder (or instant coffee)
  • 1/2 cup toffee bits
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (176°C) and line your baking trays with parchment paper to prevent sticking.
  2. Melt the butter in a saucepan over medium heat, stirring constantly until it becomes fragrant and golden brown. Allow it to cool slightly before using.
  3. Combine the white sugar and dark brown sugar with the browned butter, mixing until well blended.
  4. Beat in the large egg, egg yolk, and vanilla extract until the mixture is smooth and creamy.
  5. Whisk together the all-purpose flour, baking soda, cornstarch, cinnamon, and salt in another bowl until fully combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until incorporated. Avoid overmixing.
  7. Fold in the espresso powder, toffee bits, and mini chocolate chips gently until evenly distributed.
  8. Scoop tablespoons of dough onto the prepared baking trays, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked; they will firm up as they cool.
  10. Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, chill the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for up to one week.
