  • 1 1/4 cups semi-sweet chocolate chips
  • 2/3 cups unsalted butter
  • 1/4 cup oil
  • 3 eggs (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 tbsp vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (176°C) and line a muffin tin with liners.
  2. Whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
  3. In a saucepan, melt the unsalted butter over low heat and stir in 1 1/4 cups of semi-sweet chocolate chips until smooth.
  4. Remove from heat and incorporate the white sugar, dark brown sugar, and oil; stir until well blended.
  5. Add the eggs and vanilla extract, whisking gently until fully combined.
  6. Fold in the dry ingredient mixture gradually, stirring until just combined.
  7. Fill each muffin liner with the batter using a scoop.
  8. Optionally, sprinkle the remaining 3/4 cup of semi-sweet chocolate chips on top before baking.
  9. Bake for 18-20 minutes, or until a toothpick inserted comes out with a few moist crumbs.

Notes

For the best results, ensure eggs are at room temperature. Store in an airtight container for up to 3 days or freeze for up to 2 months.
