Chocolate Ganache

A simple classic Chocolate Ganache that delivers a silky texture and balanced bittersweet flavor, perfect for glazing cakes or filling tarts.

Ingredients

  • 8 ounces quality semi-sweet chocolate bars, finely chopped
  • 1 cup heavy cream or heavy whipping cream

Instructions

  1. Place the chopped chocolate in a medium heat-proof bowl.
  2. Heat the cream in a small saucepan over medium heat until it begins to gently simmer.
  3. Pour the hot cream over the chocolate, and let it sit for 2 to 3 minutes.
  4. Slowly stir the mixture with a metal spoon or spatula until completely combined and smooth.
  5. Let the ganache sit at room temperature to cool and thicken, stirring occasionally.
  6. Chill the ganache until it holds shape for piping.
  7. To store, cover tightly and keep in the refrigerator for up to 5 days or freeze for up to 3 months.

Notes

Avoid introducing water to the chocolate to prevent seizing. Use a quality chocolate bar for the best flavor.
