Cinnamon Roll Cookies

  • 1 tsp baking powder

  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the filling: ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well blended.
  3. In a separate bowl, cream the softened butter with granulated sugar and brown sugar until the mixture is light and fluffy.
  4. Beat in the egg and vanilla extract, mixing until smooth.
  5. Gradually mix in the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  6. For the filling, combine the packed brown sugar and ground cinnamon in a small bowl, mixing well.
  7. Place half of the cookie dough onto a piece of parchment paper and spread it into a rectangle about a quarter-inch thick.
  8. Evenly sprinkle the filling mixture over the dough, then roll it up tightly using the parchment paper.
  9. Slice the rolled dough into rounds about ½ inch thick and place them on a baking sheet lined with parchment paper.
  10. Bake the cookies for 10-12 minutes or until they are golden brown. Allow them to cool slightly before serving.

Ensure your butter is softened for easy creaming; this helps achieve a light and fluffy texture. Store cookies in an airtight container at room temperature for up to a week.
