  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 1/3 cup packed light or dark brown sugar (65g)
  • 1/4 cup milk (60g/ml)
  • 1/4 cup sour cream or plain yogurt (60g)
  • 2 tablespoons unsalted butter, melted (28g)
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 cup granulated sugar (200g)
  • 1 teaspoon ground cinnamon (for coating)
  • 1/2 cup unsalted butter, melted (113g, for coating)

Instructions

  1. Preheat the oven to 350°F (177°C) and grease donut pan(s) with nonstick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, 1/2 teaspoon cinnamon, and nutmeg.
  3. In another bowl, whisk the egg, brown sugar, milk, sour cream, melted butter, and vanilla until smooth.
  4. Combine wet and dry ingredients and mix just until combined; do not overmix.
  5. Fill the donut cavities halfway with batter.
  6. Bake for 10 minutes or until lightly browned and springy to the touch.
  7. Let cool for 2 minutes in the pan, then transfer to a cooling rack.
  8. In a bowl, mix 1 cup sugar and 1 teaspoon cinnamon for the coating.
  9. Dip each donut in melted butter, then roll in the cinnamon-sugar mixture.
  10. Serve immediately for the best texture.

Notes

Use a light hand when mixing after adding the flour to avoid dense donuts. If you do not have a donut pan, bake in a muffin pan and reduce baking time by a minute or two.
