Cowboy Butter Lemon Bowtie Chicken with Broccoli

A bright, buttery weeknight dish that combines savory chicken with zesty lemon and tender broccoli, all enveloped in a glossy garlic butter sauce.

Ingredients

Scale
  • 12 oz bowtie pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 1 lemon, zested and juiced
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the bowtie pasta according to package instructions; drain and set aside. Reserve a splash of the pasta cooking water in case you need to loosen the sauce later.
  2. Melt the butter over medium heat until fragrant and slightly bubbling.
  3. Add the minced garlic, paprika, salt, and black pepper; cook for 1 to 2 minutes until fragrant.
  4. Toss in the diced chicken and cook until browned, about 6 to 8 minutes.
  5. Stir in the broccoli and cook for an additional 3 to 4 minutes, until bright green and tender-crisp.
  6. Squeeze in the lemon juice and add the zest; mix well.
  7. Toss the cooked pasta into the skillet, ensuring it is coated in the sauce.
  8. Garnish with chopped parsley and serve warm.

Notes

Dice the chicken into uniform pieces for even cooking. Refrigerate leftovers in an airtight container for up to 3-4 days.
