Death by Chocolate Cake

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt

  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup dark chocolate chips
  • 1/2 cup unsalted butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well mixed.
  4. Stir in the boiling water carefully. The batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove and let them cool completely on wire racks.
  8. Melt the dark chocolate for the frosting and let cool slightly.
  9. Beat the butter until creamy, then gradually add the powdered sugar and cocoa powder.
  10. Add the heavy cream and vanilla extract, mixing until smooth. Stir in the melted chocolate.
  11. Spread frosting between cake layers and cover top and sides with remaining frosting.
  12. Serve and enjoy!

Notes

Ensure butter is at room temperature for easier frosting. You can freeze the unfrosted cake layers for up to 3 months.
