Easter Shortbread Cookies

Welcome spring with a batch of classic Easter Shortbread Cookies, a simple and elegant treat perfect for holiday gatherings, with a buttery flavor that melts in your mouth.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Colored sugar or sprinkles for decoration (optional)

Instructions

  1. Preheat your oven to 325°F (165°C). Position a rack in the center of the oven.
  2. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy, about 2 to 3 minutes.
  3. Add the vanilla extract and mix well until evenly distributed.
  4. Sift in the flour and salt, mixing until the dough is smooth.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Chill if necessary.
  6. Use Easter-themed cookie cutters to cut out shapes and place them on an ungreased baking sheet.
  7. Sprinkle colored sugar or sprinkles on top if desired.
  8. Bake for 18 to 20 minutes until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Work with well softened butter for easier creaming. Store cookies in an airtight container for up to 5 days.
