Famous KFC Coleslaw Classic

A creamy and tangy coleslaw with a delightful crunch, perfect as a side for fried chicken or pulled pork.

  • 120 ml mayonnaise
  • 65 g granulated sugar
  • 60 ml whole milk
  • 60 ml buttermilk
  • 38 ml freshly squeezed lemon juice
  • 22 ml distilled white vinegar
  • 3 g fine sea salt
  • 0.5 g ground black pepper
  • 800 g finely chopped green cabbage
  • 30 g shredded carrot
  • 20 g minced white onion

Instructions

  1. Prepare the vegetables: Finely chop the green cabbage and carrots to a uniform, rice-sized consistency. This ensures the authentic texture of the coleslaw. Also, mince the white onion.
  2. Make the dressing: In a large mixing bowl, whisk together the mayonnaise, granulated sugar, whole milk, buttermilk, lemon juice, distilled white vinegar, fine sea salt, and ground black pepper. Vigorously whisk until the mixture is smooth and well emulsified.
  3. Combine: Add the finely chopped cabbage, shredded carrot, and minced onion to the bowl with the dressing. Mix thoroughly, ensuring all the vegetables are evenly coated with the dressing.
  4. Refrigerate: Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 2 hours. For the best flavor and texture, let it rest overnight if possible.

Notes

Store the coleslaw in an airtight container in the refrigerator for up to 3 days. It is not recommended to freeze coleslaw due to the mayonnaise.
