French Onion Chicken Orzo Casserole

A hearty and comforting casserole featuring caramelized onions, tender chicken, and creamy orzo pasta topped with melted Gruyère cheese.

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 pound chicken breast or thighs
  • 4 cups chicken broth
  • 1 cup shredded Gruyère cheese
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt, cooking for about 15 minutes until caramelized.
  2. Season chicken with salt and pepper, then sear in a separate pan for about 4-5 minutes on each side until golden brown.
  3. Add cooked chicken to the skillet with caramelized onions. Stir in orzo, chicken broth, and thyme, mixing thoroughly.
  4. Transfer mixture to a greased 9×13 inch casserole dish, ensuring orzo is submerged in broth.
  5. Top with shredded Gruyère cheese.
  6. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until cheese is golden and bubbling.

Feel free to substitute chicken with sautéed mushrooms for a vegetarian version or use quinoa instead of orzo for a healthier grain option.
