Garlic Butter Chicken Bites

Quick, flavorful garlic butter chicken bites that are perfect for busy weeknights, casual entertaining, or as a handheld meal over pasta or rice.

  • to 2 pounds boneless chicken thighs or chicken breast (cut into bite-sized pieces)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper (or more for bolder flavor)
  • 45 cloves garlic (minced)
  • 23 tbsp parsley (chopped)
  • 2 tbsp olive oil (use more if needed)
  • 2 tbsp butter (add more for a richer sauce)
  • 1 tbsp hot sauce (for extra kick, optional)
  • ½ cup chicken broth (for a thinner sauce, optional)
  • lemon wedges (for fresh flavor)
  • Parmesan cheese (optional, for creamy finish)

Instructions

  1. Cut the chicken into bite-sized pieces. Pat dry with paper towels.
  2. In a bowl, season the chicken with garlic powder, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes if using. Toss to coat evenly.
  3. Heat a skillet over medium-high heat and add 1 tbsp of olive oil. Cook chicken in a single layer for 4 to 5 minutes on one side until golden brown.
  4. Flip the chicken and cook for another 4 to 5 minutes until fully cooked and the internal temperature reaches 165°F. Transfer to a plate.
  5. In the same skillet, add butter and remaining olive oil. Add minced garlic and sauté for 30 seconds.
  6. Pour in the chicken broth and simmer for 1 to 2 minutes.
  7. Add the chicken back to the skillet and toss with the garlic butter sauce. Stir in parsley and hot sauce if desired.
  8. Finish with a squeeze of fresh lemon juice and sprinkle with Parmesan cheese if desired. Serve warm.

Notes

Use thighs for juicier bites, and ensure chicken is cut into uniform pieces for even cooking. Store leftovers in an airtight container for up to 3 days.
