Garlic Butter Chicken

A quick and comforting Garlic Butter Chicken bathed in a silky butter sauce with a warm, garlicky aroma.

Ingredients

Scale
  • 2 pork tenderloins (about 1 to 1 ½ pounds each)
  • ¼ cup all-purpose flour
  • ½ cup chicken stock (low-sodium preferred)
  • 6 tablespoons unsalted butter (divided into chunks)
  • 2 cloves garlic (minced or finely diced)
  • 1 tablespoon fresh parsley (finely chopped)
  • 1 tablespoon olive oil (for cooking)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon (divided into 4 wedges for serving)

Instructions

  1. Combine the flour, garlic powder, salt, and pepper in a shallow dish. Mix evenly.
  2. Butterfly the chicken and dredge each piece in the flour mixture.
  3. Heat butter and olive oil in a large frying pan over medium-high heat. Add the chicken and cook until golden, about 3-5 minutes per side.
  4. Remove chicken and set aside. Lower heat and add minced garlic to the pan, cooking until fragrant.
  5. Add chicken stock and scrape up browned bits from the pan. Let the stock reduce slightly for 1 to 2 minutes.
  6. Add remaining butter and whisk until melted. Stir in parsley and adjust seasoning.
  7. Return chicken to the pan and simmer in the sauce for a few minutes to finish cooking.
  8. Serve with a squeeze of lemon from the wedges.

Notes

Pat the meat dry before dredging for even browning. Use a mix of butter and olive oil for the best flavor.
