Garlic Steak Bites and Potatoes

Ingredients

  • 1 lb sirloin or flank steak, diced
  • 1 lb new potatoes, quartered
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (rosemary or thyme), to taste

Instructions

  1. Dice the steak into bite-sized pieces and cut the potatoes into quarters.
  2. In a bowl, toss the steak with olive oil, minced garlic, salt, pepper, and herbs; let it marinate for 10 minutes.
  3. Heat a skillet over medium-high heat, add olive oil, and cook the quartered potatoes for 10-15 minutes until golden and crispy.
  4. Push the potatoes aside in the skillet and add the marinated steak in a single layer; cook for 3-4 minutes on each side to desired doneness.
  5. Combine the cooked steak with the potatoes in the skillet, adjust seasoning if necessary, and serve hot.
  6. Garnish with fresh herbs before serving.

Notes

Consider using a cast-iron skillet for better heat retention and searing.
