Gooey Coffee Caramel Cake

A heartwarming cake that unites the rich flavors of coffee and sweet caramel in a gooey, delicious treat.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • 2 large eggs
  • 1 cup brewed coffee
  • 1 cup caramel sauce
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch square baking dish with butter or line it with parchment paper.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and a pinch of salt.
  4. In a separate bowl, beat the eggs and then add the melted butter, brewed coffee, and vanilla extract. Whisk until fully combined and frothy.
  5. Gradually add the wet ingredients to the dry mixture, stirring until just combined.
  6. Pour half of the batter into your prepared dish, then drizzle half of the caramel sauce over the top. Pour the remaining batter over this and finish with the last of the caramel. Bake for about 45 minutes, or until a toothpick comes out clean.
  7. Allow the cake to cool for at least 15 minutes before slicing. Serve warm with additional caramel sauce if desired.

Notes

For a kid-friendly version, reduce the coffee to half a cup or substitute it with milk.
