A delightful fusion of brownies and cookies, these Gourmet Brownie Cookies are fudgy in the middle with crisp edges, easy to make, and ideal for any dessert table.

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a mixing bowl.
  3. Add granulated sugar to the melted butter and mix until smooth. Add eggs one at a time, whisking well.
  4. Stir in the vanilla extract.
  5. In a separate bowl, sift together flour, cocoa powder, baking soda, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  7. Fold in chocolate chips.
  8. Scoop heaping tablespoons of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes until edges are firm but centers remain soft and gooey.
  10. Let cool before transferring to a wire rack.

Notes

For a gluten-free option, substitute almond flour. Store cookies in an airtight container for up to a week.
