  • 1/2 cup sour cream (optional)
  • Lime wedges (optional)

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together the honey, lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper until well combined.
  2. Marinate the Chicken: Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, or up to 4 hours for more intense flavor.
  3. Preheat the Grill: Set a grill, grill pan, or skillet over medium-high heat.
  4. Cook the Chicken: Remove the chicken from the marinade and grill or cook for about 6-7 minutes on each side, until the chicken reaches an internal temperature of 165°F (75°C). Let the chicken rest for 5 minutes before slicing into strips.
  5. Cook the Rice: Prepare the rice according to package instructions using either water or chicken broth. Once cooked, fluff the rice with a fork.
  6. Add Ingredients to Rice: Stir in 1 tablespoon of olive oil, diced avocado, fresh cilantro, and lime zest. Season with salt and pepper to taste.
  7. Assemble the Dish: In serving dishes, layer a portion of the avocado rice at the bottom. Top with sliced honey lime chicken. If desired, drizzle with sour cream and garnish with lime wedges.
