Honey Lime Chicken Avocado Rice

A vibrant meal featuring tender, marinated chicken served over creamy avocado-infused rice with a sweet and tangy honey-lime sauce.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice, freshly squeezed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup white or brown rice
  • 2 cups water or chicken broth
  • 1 tablespoon olive oil
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon lime zest
  • Salt and pepper, to taste
  • 1/2 cup sour cream (optional)
  • Lime wedges (optional)

Instructions

  1. Combine honey, lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper in a small bowl. Whisk until well blended.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat your grill, grill pan, or skillet over medium-high heat.
  4. Remove the chicken from the marinade and grill or cook for 6-7 minutes per side until the chicken reaches an internal temperature of 165°F (75°C). Let the chicken rest for 5 minutes before slicing into strips.
  5. Cook the rice according to package instructions using water or chicken broth. Fluff the rice with a fork.
  6. Stir in 1 tablespoon of olive oil, diced avocado, fresh cilantro, lime zest, and season with salt and pepper to taste.
  7. Layer a portion of the avocado rice in your serving dishes and top with sliced honey lime chicken. Drizzle with sour cream and garnish with lime wedges if desired.

Notes

For enhanced flavor, marinate the chicken overnight. Store leftovers in an airtight container for up to 3 days.
