  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • Juice of 1 lemon (about 2 tablespoons)
  • Zest of 1 lemon
  • 1/4 cup chicken broth
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and black pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken to the hot skillet and sear for 5 to 6 minutes per side until golden and cooked through.
  4. Remove the cooked chicken from the skillet and tent loosely with foil to keep warm.
  5. Reduce the heat to medium and add 4 tablespoons unsalted butter, scraping up brown bits from the bottom of the pan.
  6. Add the minced garlic to the melted butter and sauté for about 30 seconds until fragrant.
  7. Stir in the lemon juice, lemon zest, and 1/4 cup chicken broth. Let simmer for 2 to 3 minutes.
  8. Return the chicken to the skillet, spoon the sauce over, and simmer for another 2 to 3 minutes.
  9. Garnish with 1 tablespoon chopped fresh parsley and serve warm.

Notes

For even cooking, let chicken rest at room temperature for 10 minutes before searing. Use an instant-read thermometer to check for 165°F.
