Matilda’s Chocolate Cake

A rich and moist chocolate cake with a glossy ganache topping, perfect for any occasion.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture and beat with an electric mixer on medium speed for 2 minutes.
  4. Carefully stir in the boiling water; the batter will be thin.
  5. Grease and flour two 9-inch round cake pans, or line them with parchment paper. Divide the batter evenly between the two pans.
  6. Bake for 30–35 minutes, until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely. Frost as desired.

Notes

Pairs beautifully with vanilla ice cream or a dusting of powdered sugar.
