Mongolian Ground Beef Noodles

A quick and flavorful dish featuring tender noodles, savory ground beef, and vibrant vegetables, perfect for busy weeknights.

  • 8 oz. egg noodles
  • 1 lb. ground beef
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 cup soy sauce
  • 1 tbsp brown sugar
  • 1 cup sliced bell peppers
  • 1 bunch green onions, chopped

Instructions

  1. In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente, about 5-7 minutes. Drain and set aside.
  2. In a large skillet over medium-high heat, add the ground beef. Cook until browned, about 5-6 minutes.
  3. Stir in the minced garlic and ginger; sauté for 1-2 minutes until fragrant.
  4. Pour in the soy sauce and add the brown sugar; stir and let simmer for about 3 minutes until slightly thickened.
  5. Add in the sliced bell peppers; cook until tender, about 2-3 minutes.
  6. Add the cooked noodles to the skillet, tossing until well coated with the sauce.
  7. Scatter freshly chopped green onions over the top before serving.
  8. Serve hot in bowls and enjoy!

Notes

For the best flavor, avoid overcooking the bell peppers; they should retain some crunch.
