No Bake Chocolate Oatmeal Bars

Quick, delightful no-bake treat combining rich chocolate, hearty oats, and creamy peanut butter.

  • 1 cup butter, melted
  • 1/2 cup light brown sugar, packed
  • 2 tsp vanilla extract (optional)
  • 3 cups quick oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter, creamy

Instructions

  1. Line an 8×8-inch baking dish with parchment paper for easy removal of the bars after setting.
  2. Combine the semi-sweet chocolate chips and peanut butter in a medium bowl. Melt them together in the microwave or on the stovetop over low heat, stirring until the mixture is smooth. Set aside to cool slightly.
  3. Melt the butter and brown sugar in a large saucepan over medium heat, stirring often until fully combined and smooth.
  4. Stir in the vanilla extract (if using), then add the quick oats to the saucepan. Cook for about 2 to 3 minutes, stirring continuously to evenly coat the oats.
  5. Press half of the oatmeal mixture firmly into the bottom of the prepared dish to form the base layer.
  6. Pour the melted chocolate and peanut butter mixture over the pressed oatmeal layer, spreading it evenly with a spatula.
  7. Sprinkle the remaining oatmeal mixture on top and lightly press down again to create a cohesive layer.
  8. Optionally, drizzle more melted chocolate over the top for added sweetness and decoration.
  9. Place the dish in the refrigerator and allow it to set for at least 120 minutes or until firm.

Notes

Store leftover bars in an airtight container in the fridge for up to one week. They can be frozen for up to three months.
