No-Bake Peanut Butter Oatmeal Cookies

  • 1 1/2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup natural unsweetened or Dutch-process cocoa powder
  • 2/3 cup creamy peanut butter
  • 1 tablespoon pure vanilla extract
  • 3 cups old-fashioned whole rolled oats or quick oats
  • 1/8 teaspoon salt

Instructions

  1. Prepare a medium saucepan and add the butter, sugar, milk, and cocoa powder over medium heat. Stir gently to combine.
  2. Whisk constantly while heating until the butter fully melts and the mixture is smooth.
  3. Increase heat slightly and bring the mixture to a full boil. Let it boil for 1 minute.
  4. Remove the saucepan from the heat and immediately stir in the peanut butter and vanilla extract.
  5. Fold in the oats and salt until evenly coated.
  6. Let the mixture sit for 5 minutes to cool and thicken slightly.
  7. Line baking sheets with parchment paper.
  8. Using a tablespoon scoop, drop tablespoon-sized amounts onto the lined sheets, spacing them about an inch apart.
  9. Chill in the refrigerator for 30 to 60 minutes until firm.
  10. Transfer cookies to an airtight container and store chilled.

Notes

For firmer cookies, refrigerate on a metal sheet pan which chills faster.
