One-Pan Garlic Butter Chicken & Potatoes

This one-pan garlic butter chicken and potatoes is a cozy, no-fuss dinner filled with warm, savory aromas.

  • 4 chicken thighs, whole, skin on or off as you prefer
  • 4 medium potatoes, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a large oven-safe skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chicken thighs to the skillet, season with salt, pepper, and dried thyme, then sear until golden brown, about 5 to 7 minutes.
  4. Add the diced potatoes around the chicken in the skillet, drizzle with additional melted butter if desired, and mix everything to coat.
  5. Transfer the skillet to the oven and bake for about 25 to 30 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Remove the skillet from the oven, let the dish rest a few minutes, then garnish with fresh parsley before serving.
